Drumbecue INVERSA

The INVERSA is a reverse flow smoking system, meaning that there is no direct heat from the fire only allowing pure smoke to enter the stacked grills inside.

The smoker has been fulling insulated using 40mm ceramic fibre insulation withstanding temperatures up t 1600 Degrees Celsius with a low thermal conductivity minimising heat loss, giving a really quick heat recovery during the times when the door needs to be opened and closed.

The INVERSA is mainly targeted for the commercial use such as street food markets as its a great product for mass catering however it is equally idea for big private gatherings as it has the capacity to for 6 cooking grills to be placed inside creating flexibility in its catering capacity.

It comes already assembled and all it need to charcoal to run it with wood chips to enhance the smoke flavours.

The smoker is set on 4 heavy duty casters (the front 2 are lockable) making it idea to move around and the total weight is around 600Kg!

The INVERSA's design in completely air tight once all doors are closed, they have high temperature rope boarding the inside of each door creating a very tight seal. This allows the reverse flow system to take full effect in the way it draws air in and out through the chimney. There are 2 sliding dampers either side of the smoker that controls the air flow and can be fine tuned to create the idea cooking temperature for whatever you may be smoking and with a good built fire you can be smoking up to 12 hours.
